RUDOLPH'S CHOCOLATE CARMEL
BROWNIES
(this one makes the reindeer
fly!)
INGREDIENTS:
4 squares unsweetened baking chocolate
3/4 cup (1 ½ sticks) butter or margarine
2 cups sugar
4 eggs
1 cup flour
1 cup chopped pecan or walnut halves
1 pkg (14 oz) caramels (unwrapped of course)
2 Tbsp milk
1 ½ cups semi-sweet chocolate chunks

STEP 1: For this part, you will need to use a double boiler or microwave oven. Place the chocolate squares and the butter together, and heat until butter melts. This is about 2 minutes on high in the microwave. Remove and continue mixing until the chocolate is melted completely. Add the sugar, and stir until well blended. Mix in the eggs and stir. Mix in the flour, and again, mix well. Stir in the pecans, or walnuts, and mix well. Put mixture into a 13 by 9 inch pan that you have lined with GREASED foil. Spread mixture to cover the bottom evenly. |

STEP 2: In a pre-heated oven, bake at 350 degrees for 30 to 35 minutes. Check with a toothpick at the center, and it comes out with "fudgy" crumbs. DO NOT OVER BAKE... the elves like it very moist. |

STEP 3: Now, back to the microwave, or double boiler. Mix the milk and caramels together. If you are using the microwave, after 1 minute you should stir the mix. Zap the mix for another 1 to 1 ½ minutes. Whether you are using the microwave or a double boiler, you will want to mix until the caramels are completely melted and well blended. Careful not to mess up your brownies in the pan, spread the mixture over top, and add the chocolate chunks for the finished layer. Let the pan cool completely on a wire rack. Using the foil lining, lift out the brownies onto a cutting board and cut into the desired size squares. Depending on how you cut them, you should get about 2 dozen... unless Rudolph is there, he thinks the pan makes just one brownie! |
